Recipes with Mussels

One of the most beloved flavors of the sea, mussels are a key ingredient in Mediterranean cuisine. Rich in aroma, deliciousness and nutritional value, they are suitable for a multitude of recipes — from simple appetizers to sophisticated dishes.
Zephyros Mussel Farms IKE suggests the following delightful ways to enjoy them.

Steamed Mussels

Simple, aromatic and full of flavor.

Ingredients: 2 kg of mussels, 1 small hot pepper (without seeds), ½ cup olive oil, ½ cup white wine, 1 large onion, chopped, ¼ cup lemon juice, 3 tbsp. chopped parsley, 2 cloves garlic, freshly ground pepper.
Instructions: Thoroughly clean the mussels, remove the "beards" and rinse them well. In a deep saucepan, heat the olive oil, wine, onion, garlic, pepper and parsley. Once boiling, add the mussels and let them cook for 5 minutes, until they open. Deglaze with the lemon juice and discard any that did not open. Fried Mussels with Garlic Sauce

Crispy and golden, with a rich homemade garlic sauce.

Ingredients: 1½ kg mussels, 2 cups flour, 1 cup beer, olive oil or corn oil for frying.
For the garlic sauce: 5 cloves garlic, 5 slices bread (without crust), 100 g walnuts, ½ cup olive oil, salt.
Instructions: First prepare the garlic sauce, by pureeing all the ingredients in a mortar or blender until smooth and fluffy. For the mussels, mix the flour with the beer until it becomes a thick paste. Dip the mussels' flesh in the mixture and fry in hot oil until golden brown. Μύδια με Μουστάρδα & Βούτυρο

Μια φίνα και πλούσια εκδοχή με κρεμώδη σάλτσα.

  • Υλικά: 2 κιλά μύδια, 100 γρ. βούτυρο, 1 μεγάλο κρεμμύδι, 4 σκελίδες σκόρδο, 1 πράσινη πιπεριά, 1 κ.σ. μουστάρδα, 100 ml λευκό κρασί, λίγο μπούκοβο, ζάχαρη, αλάτι, πιπέρι, ½ ματσάκι μαϊντανό.
  • Εκτέλεση: Βράζετε τα μύδια μέχρι να ανοίξουν, κρατώντας ένα ποτήρι από το ζωμό τους. Σε τηγάνι λιώνετε το βούτυρο και σοτάρετε το κρεμμύδι, το σκόρδο και την πιπεριά. Προσθέτετε τη μουστάρδα διαλυμένη στο ζωμό, λίγο ζάχαρη και το κρασί. Μόλις δέσει η σάλτσα, ρίχνετε τα μύδια και τον μαϊντανό και αφήνετε για λίγα λεπτά. Linguini with Mussels

A classic Italian dish, aromatic and delicious.

Ingredients: 1 package of linguine, 4 tbsp. olive oil, 1 large onion, 2 cloves of garlic, 1 tbsp. tomato paste, 1 glass of red wine, 1 can of chopped tomatoes, 1 kilo of mussels, parsley, thyme, salt, pepper.
Preparation: Sauté the onion and garlic in the oil in a large saucepan. Add the tomato paste, tomatoes and wine. Add the mussels and cover for a few minutes, until they open. Add parsley, thyme, salt and pepper. Boil the linguine al dente and mix with the sauce. Serve hot with freshly ground pepper.
