Steamed Mussels
Simple, aromatic and full of flavor.
Ingredients: 2 kg of mussels, 1 small hot pepper (without seeds), ½ cup olive oil, ½ cup white wine, 1 large onion, chopped, ¼ cup lemon juice, 3 tbsp. chopped parsley, 2 cloves garlic, freshly ground pepper.
Instructions: Thoroughly clean the mussels, remove the "beards" and rinse them well. In a deep saucepan, heat the olive oil, wine, onion, garlic, pepper and parsley. Once boiling, add the mussels and let them cook for 5 minutes, until they open. Deglaze with the lemon juice and discard any that did not open. Serve hot, with their juices.
